Chocolate Peanut Butter Cookies
Can you believe these cookies are part of my bikini competition prep diet? I'm so happy I made these! If you love peanut butter and chocolate, these are to die for and best of all it's good for you!Ingredients (makes 5 servings):
5TBS of natural, unsalted, chunky peanut butter
1 egg white
1TSP of honey
2 packets of Sweet Leaf Stevia (if you don't have stevia, just add another TSP of honey)
IsaDelight (Isagenix) Dark Chocolate or 5 Ghirardelli 60% Cocoa Chocolate Chips (First ingredient of your chocolate should be cocoa and the more cocoa it has in it, the better)
Preheat your oven at 350F. In a bowl, add peanut butter, egg white, honey and stevia. Mix well. Then line a baking sheet with parchment paper or spray with non-stick spray. Each cookie should be 1TBS of peanut butter, so separate batter into 5 balls and place on baking sheet a couple inches apart. I used IsaDelight (Isagenix) Chocolate, since this chocolate contains healthy dark chocolate and green tea to improve your mood and metabolism! I cut this squared chocolate into 5 pieces and placed them in the center of each cookie. If you don't have this chocolate, click here to purchase! Or if you can't wait to make these, place one Ghirardelli chocolate chip or other high quality chocolate chip in the center of each cookie.
Now bake them for 10-12 minutes! Let them cool for about 5 minutes and eat 1-2 a day! I loved these so much that I have to make a small batch to make sure I don't eat them all. 1 cookie is 1 serving of healthy fat. Right now, my diet allows me 2 servings of healthy fats a day, so I only ate 1 and gave the rest away.
These cookies are only 3 grams of sugar and 2 grams of fiber per cookie, even with the honey, but if you absolutely cannot have any sugar in your diet, then just add a couple more packets of stevia or xylitol. They might even taste good without sweetener, but I can't guarantee that since I haven't made them that way.
I'll definitely be making these again and again. For the days when I can have more sugar in my diet, I'll add a whole TBS of honey to get that extra sweet taste :)
